Who am I? (+ super easy delicious Thai dish)

Here's a little insight into who I am, what rocks my boat and what gets me up in the morning !

Living in near-paradise, one street back from beautiful Mt Maunganui beach, makes it pretty easy to get up each day! If I wake early enough to catch amazing sunrises, it's an even better start to the day, joining the early tribe of ‘dog walking friends’ Aysha and I have made. Aysha is my ‘best buddy’ 12 year old golden retriever :)

I am LOVING working for myself, from my home where I can get into my own work - life flow, depending what I’ve got on (read more about how to achieve the flow in your life with my free guide)

My day flows between clients who come to my home office, clients I coach on Skype, inspiring and excitable meet-ups with my co-coach Melinda (such as planning our Bali Retreats for 2016!). Melinda and I do the whole shebang in one morning – quick walk around the Mount, coffee, then sit and plan and brainstorm exciting and inspiring things for our retreaters, sitting on the beachfront now that summer’s here!

Then I get to attend to admin, writing my blog from my study, overlooking my back garden, which is filled with fruit trees and vegetables! It’s amazing, my ‘work’ and ‘play’ just flow and intertwine. Working with clients or planning and taking workshops or retreats or weddings – they are all fun and exciting and insightful experiences and none of them ever really feel like hard work. Yay!!

Since I left my last job in April this year, my car has kind of become redundant, except when I go to Taranaki for weekends to visit my gorgeous one and only granddaughter Isla – and her mum and dad! I pretty much go everywhere on my trusty, rusty, yellow, no gears, sitting upright, comfy seat bike! Takes a bit longer to get places at times, but luckily the Mount is pretty flat, and cycling along beside the ocean can be amazingly therapeutic! Cycling leisurely (the only speed possible on Trusty Rusty!) down to the markets on a Sunday, filling up my basket with fresh bread, produce flowers and chocolate is the best!

Speaking of food...I'll admit it's an obsession! Grow it, harvest, prepare and eat it and share with my family, friends, whoever is around. My faves would be beautiful vege lasagne made with silverbeet and mushrooms and REAL old fashioned cheese sauce, and Thai fried rice with prawns that I learned at a cooking school in Thailand. Very simple and super delicious – you can whip it up in no time. Let me know what you think.

The Quickest Easiest Yummiest Thai stir fry - perfect for summer evenings – Enjoy!

Thai fried rice with seafood (Khao Phad Talay)


Ingredients:

  • 1 cup cooked rice

  • 200 grams prawns, squid or steamed crabmeat

  • 1 egg

  • 4 -5 pieces onion, sectioned

  • 1 tomato quartered

  • 1 carrot

  • Bok-Choy, silver beet or Chinese cabbage

  • 1 tsp chopped garlic

  • Grated ginger and diced chilli to taste

  • 3 tbsp peanut oil

  • 1 - 2 tbsp oyster sauce

  • ½ to 1 tbsp fish sauce

  • 1 tsp palm or raw sugar

Method:


Fry the garlic, ginger and chilli in the oil, add the egg and stir until cooked. Add veges, oyster sauce and fish sauce and sugar. Stir fry until vegetables are almost cooked. Add seafood and just cook through. Add the rice and stir fry through.

Transfer to a plate and serve with spring onion and cucumber slices. YUM!

Serves 2, so double or treble or .......your choice!
